I've been making today's featured recipe on repeat for the last few weeks—it's that good! It's a new Miso Garlic Chicken with a Carrot, Beet, and Toasted Sesame Seed Salad. It's healthy, vibrant, nourishing, and the kids love it. It's also perfect for meal prep or scaling up for a crowd. If you have young kids like me, or just like to be organised, I love that I can prep the chicken and veggies in advance, then bake and throw together just before dinner time. The perfect weeknight meal.
In other news, my son's 'dinosaur-esque' birthday cake was a success! I topped it using a few dinosaur figurines I found in the cupboard, some leftover Easter eggs, and fresh rosemary cut from the garden. It turned out super cute, and he loved it.
Other food highlights from the celebrations were my baked eggs, chia puddings, a delicious focaccia (thanks to Nicola Lamb's recipe), and an epic fruit platter crafted by my mother-in-law—simply stunning.
Later for dinner, I experimented with a slow-cooked lamb shoulder (a new recipe I’m developing), then kept it simple with steamed potatoes and tarragon butter (another work-in-progress, but essentially melted salted butter infused with fresh tarragon poured over the potatoes—delicious!), alongside a mix of leafy greens and a radicchio salad topped with roasted walnuts. It was a big weekend of entertaining!

Here's a healthy, vibrant, and nourishing miso garlic chicken recipe that makes the perfect mid-week meal. It's also great for meal prep or for increasing quantities if serving a crowd.

That’s it from me. I'm off to prep for a dinner party I'm hosting tomorrow night. I'm thinking of making my Tomato Vodka Fusilli and a fresh Pici Cacio e Pepe, along with a few salads. Probably a Chopped Kale, Radicchio, & Parmesan Salad as well as my Fennel & Orange with Olive Oil Fried Walnuts & Zest. I'm also baking fresh focaccia (which seems to be on the regular lately!) and try my hand at fresh chicken liver pâté. It's a new recipe for me, but I'm excited to give it a try!
