Easter with the family was a great success! β¨ The weather was perfect, the table looked beautiful, the mains and desserts were delicious, and of course, the kids had the best time hunting for eggs and enjoying A LOT of chocolate. I even organised a riddle-based egg hunt for the adults, showcasing my knack for crafting clever rhymes. π
Recipe highlights definitely included the herb and garlic baked fresh sardines served with fresh focaccia. I love Nicola Lamb's focaccia recipe and method; it's one I use frequently (her writing is also extremely informative). Additionally, an oozing centre burnt baked Basque cheesecake topped with tons of fresh berries was delicious! The recipe for this will be featured in my upcoming DESSERTS eBook.
Can you believe we're already in the second quarter of the year? Melbourne has decided to usher in the cold weather these last few days. As I write this, I'm all bundled up, sipping on peppermint tea, and watching the silver birch trees outside my window shed their leaves. Today, I've featured a few recipes perfect for the cooler transitional season, including Spiced Meatballs with Pearl Couscous and these divine Spiced Poached Breakfast Pears with Star Anise. Yum! β¨ Spiced Meatballs with Pearl Couscous, a Fresh Zucchini Roasted Almond Salad, & Honeyed Yoghurt
This recipe is a complete meal that's perfect for a quick weeknight dinner or a weekend gathering. The spiced meatballs are juicy and tender, infused with a blend of cumin and cardamom. The pearl couscous provides a satisfying chewiness, while the zucchini roasted almond salad adds a refreshing crunch. The honeyed yoghurt, with its sweetness and tanginess, ties everything together.
Feel free to serve each element in individual bowls as a 'share-style' dinner for guests to build their own plate. Flatbreads warm from the oven would also make a delicious addition, especially if you're entertaining guests.
