lazy dinner pantry pasta 🍝
plus, a new chicken and fresh herb sandwich + this week's things I'm loving (the Y peeler)
We had another birthday in our household this past weekend—a milestone one, in fact—this time for my husband, Mike. We celebrated with breakfast pancakes (now a tradition), birthday cake, and a beautiful dinner out at Gimlet at Cavendish House.
Baking the birthday cake was another great opportunity to test a new recipe I've been eager to share: this time a black forest 'ish' layer cake (pictured below). It's a chocolate cake with a vanilla mascarpone and cherry filling and chocolate ganache. It turned out brilliantly, so I've scheduled to shoot and share it with you all very soon!
Another new recipe I just posted is today's feature: the simplest of pantry pastas, Tomato, Olive Oil, and Garlic Pantry Spaghetti. This recipe (or handful of ingredients) is one I turn to often when in need of a quick, easy, comforting meal.
It’s perfect for those lazy dinner nights when the choice is between eggs on toast or this simple tomato spaghetti dish. I always have at least one can of crushed tomatoes, garlic, olive oil, and a packet of spaghetti in my pantry, whether for this recipe or tomato baked eggs. A strategically stocked pantry does wonders, but that’s a topic for another time.

There are a few simple but key points to making a dish as simple as this really shine.

The Y peeler-a very quick and efficient kitchen tool. I love the OXO Good Grips and The Forever Peeler.
'Australian Food' by Bill Granger-one of my favourite cookbooks of his. It's full of light, fresh, simple recipes, and many of his classics that you might recognise from his restaurant, 'Bills.' It's one of my favourite cookbooks to gift, especially to new couples or anyone moving out of home.
This embroidered table cloth 😍 (also on sale).
I love a simple yet slightly different set of wooden salad servers. I have some similar ones at home that I use constantly.
