It's my wedding anniversary and also Valentine's Day next week, and to celebrate, I was contemplating a cosy pasta night in enjoying one of my favs: my Roasted Beetroot & Thyme Spaghetti (pictured below). We're also on the waiting list for a very beautiful and popular restaurant here in Melbourne, 'Gimlet at Cavendish House,' but I'm not too optimistic about our chances there. 😁

How amazing is the colour of that pasta though!? 😍 And no, there are no spiralized beets involved in its creation. To achieve that vibrant beetroot-stained pasta hue, I pureed roasted beets and tossed cooked spaghetti in the rich sauce. As the spaghetti gets coated in the sauce, it not only absorbs the flavour but also takes on that gorgeous, vibrant red colour. I then add some texture by incorporating toasted walnuts, creamy goat cheese, and salty crispy sage. Yum!
