It's my birthday week! 🎂 To celebrate, I took the opportunity to bake my own cake and simultaneously experimented with a new 'Chocolate Birthday Cake' recipe to share (pictured below). I love a light, moist cake—especially one that maintains its moisture even after a few days, and this one does just that. The key is to use olive oil and flaxseed meal in the mixture, which makes for easy one-bowl baking, a win-win. This cake is super chocolatey without being overly rich, making it the ideal 'birthday party cake.'
